The Shish concept originated with our
founder's continual disappointment with
the manner in which this food was served
here in the UK. We could find nowhere to
meet our expectations for quality of ingredients,
service and hygiene standards. So we did
it ourselves.
All of the chicken and lamb we procure is certified halal. Our raw meat is
delivered via London butchers with BRC accreditation, the highest level of
food safety practices. We are not however a halal restaurant as our cuisine
reflects the 2,000 mile long Silk Road that is imbued with a variety of
different cultures.
We have re-invented this delicious food
within a warm and modern restaurant, whose
central concern is providing the highest
quality food at a value for money price.
Shish is a modern interpretation of this
style of food and method of cooking, drawing
on influences from the Silk
Road and beyond. Eating at Shish is
a relaxed and informal affair, based on
eastern cultures, where food brings people
together. Mix and match from small dishes
of mezze, skewers of lightly marinated meats,
fish, chicken and vegetables, steamed rice,
couscous and breads. All our food is freshly
made daily, from only the highest quality
ingredients.
We care passionately about the provenance of all of our produce for example
our lamb is from Suffolk breed from Cropfield Farm, our chicken from
Ross/Cobb grade A breed from Kenninghall Farm & Mill in Suffolk and our beef
from Charrolais & Limousin breeds comes from Wardes Farm in Aberdeen.
Chefs all along the Silk Road buy local fresh produce and cook to order – so do
we. That's how it should be….
